zoom & general vision stuff

hi, i'm getting very stressed about the vision and zoom functions in the new osx, please help...
i merely want EVERYTHING a bit bigger, not just the command and + keys as they only zoom the open window.
for example in the MAIL program i want increase the size of the task bar and the message list but the zoom command only works for the selected message, and the same in safari and sll other programs!
this makes my experience with my new 27 inch imac quite uncomfortable in ways that weren't a problem on my previous macs, any suggestions?

ok found tinkertool so am sort of happy, still have the issue in mail though!! any suggestions??
