NewB finder/(file save dialog) question

A repeating issue I have with the file save and finder on the mac OS (high sierra) is that I don't see how to save a file -- a download, say, in a subfolder of the selected folder. yes I know I can put any folder in as a favorite, but I'd like to be able to choose at "save time". Can this be done? What am I missing???

When you go to save /save as do you get an expanded dialog box(2.png) or the more concise one(1.png)?
