Mail individual and 'all' inbox/sent folders showing different information on different Apple devices

Hi
Is it possible to confirm the belief that apple mail should show the same information on account inboxes and the 'all' section on an iPhone 16, the latest iPad and MacBook.
I am losing acknowledgement to important emails, and wondering if this is a misconception and means I have wasted a lot of money in coming across from MS windows and android devices where this principle worked seamlessly.
