Graphic designer : Macbook Pro M1 2020 vs Macbook Air M3 2023 and other - Asking for advice

Hello...

I am a graphic designer, I have experience only with iMac, I have never worked with a Macbook.
My old iMac is still in a pretty good shape but it is no longer suitable for my needs : learning AI, Lightroom and Premiere Pro, using them but not intensively everyday, and purchasing an Adobe subscription to be up-to date with the latest Creative Suite features.
So, I plan to buy a Macbook. Because of my budget, I am looking at second hand models.

I understand that Macbook Pro was designed for designers/video editors, etc. and Macbook Air was created for lighter tasks.
However, lately, I updated myself and I "learnt" about M1 M2 M3; I saw a few offers that seem interesting within my budget and I need experts' opinions or recommendations : )

I'd like to purchase something that can do the job for at least 3 years.
The list below is not exhaustive, but more than an opinion on a specific product, I'd like to understand how to assess the quality/technology/potential of those options (for a couple of options, I'd have to contact the seller to get precise information).
Minimum 16 Go. Screen size doesn't really matter to me (except if it has an incidence on the performances).
Offers are on a reputable and rather reliable French website (I am French).

Macbook Pro M1 2020 - 2 To
MacBook Pro M2, 2022 > My concerns here, no info about the seller, product description in English and "No refurbished". I have like a "too beautiful to be true" feeling.
Macbook Air M3 2024 - 245 Go
Macbook Pro M1 Pro 2021 - 32 Go RAM - 1 To

Maybe 2 questions to summarize:
- is a 2023 M3 Macbook Air better than a M1 2020 or 2021 or 2022 Macbook Pro ?
- is a 2023 M3 16 Go Macbook Air better than a 2020 M1 32 Mo Macbook Pro ?
