Can someone suggest software or a set of procedures for converting contacts (.abbu) to csv files?

Hello and welcome.

If you are trying to export macOS Contacs to a CSV file, this article may help: Export Mac Mail Address Book Contacts to CSV File.

There are a few applications that will do that, and if you simply have an old Address Book/Contacts archive, you could import it into Contacts, then use the steps in the article.

I will give this a try - the other posts online didn't work. Can I just say that it is insanity that we can't just export a raw file to csv or a standard spreadsheet format out of our Contacts in 2021

Not sure the app you referenced is still valid or supported. Only 1 star ratings with a few downloads over the past year for a $0.99 app.
