Not sure about the 30" Cinema Display, but I’m sure you can run another monitor via Thunderbolt. I used to run two 30" Cinema Displays on my MacPro but never got a chance to try them when I got my Mac mini to replace it. I immediately connected two 32" LG monitors to it and have moved them to my Mac Studio Max since. I suggest trying to get the Cinema Display to work on the Mac mini and then getting the other (thunderbolt) monitor. If I recall right, the Cinema Display required an Apple Mini DisplayPort to Dual-Link DVI Adapter.
Thanks you for your response. I have been using the 30 inch for a few years without any trouble but I would like the two monitor for some upcoming projects. I have been on you tube and most are saying the m1 mac mini only can run 1 external display. Just asking in hopes someone may know a work around...

That’s precisely why I would check first if the Cinema Display will work off of the Mac mini—maybe using the HDMI port for the DVI adapter. The newer monitor will easily work with Thunderbolt to Display port or HDMI.
