Click here... link in Mac Mail

I was able to create a link that says "Click here...." instead of a long URL in Mac Mail. I use this email a lot. I would like to create a new one but I can't remember how I got it done. The Raw Source of the email says "Click here .... = <URL>"

Can someone remind me how to do this?
